Caribbean Sunrise Smoothie

This, seriously, is so good.

How good is it?

It’s so good that when I made it this afternoon, I took a sip to make sure it was perfect, then another sip, then another… and ended up having to make another half-batch to have enough for this picture.

Occupational hazard…

Cream of coconut is easily confused with coconut cream.

Coconut cream is made by boiling down shredded coconut in water. It has a rich, unctuous consistency and has tons of health benefits, namely lots of good saturated fats.

Cream of coconut is coconut cream that has been sweetened with cane sugar. It has all the same great health benefits, but also some extra calories from the added sugar. If you want to leave it out, substitute with either unsweetened coconut cream or 1/4 teaspoon of coconut extract, then add enough honey or other sugar alternative to sweeten it to your taste.

Serves: 2-3

Ingredients
  • 2 oz. frozen whole strawberries (about 5)
  • 2 oz. frozen mango chunks (about 5 medium chunks)
  • ½ ripe banana
  • 1 cup cold pineapple juice
  • 4 tablespoons cream of coconut
  • 2 tablespoons honey
  • Pinch of kosher salt
  • 2 cups crushed ice
  • 1-2 oz. light or coconut rum (optional)

Instructions
  1. Add all the ingredients to your blender, then mix on high until smooth. Garnish with your favorite fruit and serve immediately.
